  • 4 flour tortillas
  • 2 cups grated cheese
  • 1/2 cup salsa
  • 1/4 cup chopped green onions
  • 1/2 cup sliced mushrooms
  • 1/2 cup diced tomatoes
  • 1 jalapeno pepper
  • optional hot sauce


  1. Grate cheese, chop onions, slice mushrooms, dice tomatoes, and chop jalapenos finely. Set fillings aside.
  2. Heat the Evo grill to Medium.
  3. Place flour tortillas on the hot cook surface and top them with your favorite cheese. Add the additional fillings at this time.
  4. Fold the tortillas in half over the cheese and fillings and brown the quesadilla on both sides.
